Overzicht

After a warm welcome, you’ll begin by exploring the foundation of Japanese flavor: umami and dashi. One of the most distinctive aspects of this class is that you’ll get to see how three types of dashi—kombu (kelp), katsuobushi (bonito), and awase (combined)—are made right in front of you, and enjoy a rare opportunity to taste and compare each one side by side.

Next, you’ll watch a demonstration of how to prepare traditional Japanese side dishes and miso soup. The plating process itself is a fun and engaging part of the experience.

You’ll then try your hand at making fluffy dashimaki tamago (Japanese rolled omelet) using a rectangular tamagoyaki pan, and finally, choose from a variety of traditional fillings to make and shape your own onigiri (rice balls) by hand.

This immersive class offers not only hands-on cooking but also a deep understanding of Japan’s culinary heritage.

Wat je gaat doen

Doe mee met onze praktische kookervaring in Tokio en leer de basis van de Japanse culinaire cultuur door middel van rijst, dashi en de kunst van tamagoyaki - geleid door instructeurs die geworteld zijn in de kappo-traditie. Ontdek het hart van de Japanse keuken in deze hands-on kookles in Tokio, ontworpen voor nieuwsgierige reizigers en liefhebbers van eten. Je duikt in de wereld van umami – de hartige “vijfde smaak” van Japan – door te leren hoe je traditionele dashi (soepbouillon) vanaf nul maakt. Ga vervolgens hands-on aan de slag terwijl je je eigen onigiri (rijstballen) vormgeeft met een verscheidenheid aan klassieke vullingen, en kook luchtige dashimaki-tamago (Japanse opgerolde omelet) met behulp van een traditionele rechthoekige pan. Een demonstratie van misosoep en bijgerechten is ook inbegrepen om uw washoku-ervaring compleet te maken. Er is geen kookervaring vooraf nodig en alle instructies zijn in het Engels. Je ontvangt een uitgeprinte receptenset en Japanse kruiden om mee naar huis te nemen, zodat je de smaken van Japan in je eigen keuken kunt nabootsen. Very polite and kind staff. Watching the chef was very compelling, he was clearly skilled at his craft. It was also fun to try out some of the techniques! And of course the food was excellent.

The tour experience was above my expectations as it not only offered us instructions on how to cook but also the background of each ingredient and how delicate and historical Japanese cooking could be. Each flavor was tasty.

Incredible experience! You learn so much of the basics of japanese cuisine and how to make the fundamentals including dashi and all the dishes you can make from it! Making your own onigiri is incredibly fun after eating so many at the kobinis
